Chewy Oatmeal Cookies

Makes about 5½ dozen cookies. This is a very large recipe if done as listed. You can either make the whole thing and refrigerate some to bake in a week or so. Or you can cut recipe in half or quarter.

1½ Pounds butter or (sometimes I use 3 cups butter flavor Crisco)
1¼ Cups sugar
3½ Cups brown sugar
1¼ Cups eggs (No this isn't a mistake.. Break eggs into mixing cup to measure)
1½ Tsp. vanilla
4½ Cups flour
1¼ Tsp. salt
2½ Tsp. baking soda
3½ Tsp. cinnamon
8½ Cups plain oatmeal
1¾ Cups chopped nuts
1½ Cups chocolate chips or raisins

Cream butter and sugars.

Beat in eggs till well blended.

Add vanilla.

In separate bowl stir together dry ingredients (four, salt etc. NOT oats) then add to creamed mixture.

Mix on low till combined.

Add oats, raisins, nuts and chocolate. Mix on low till evenly mixed.

Place dough by spoonful about 1½" apart (dough spreads slightly) on lightly greased cookie sheet. Bake at 375° 12-14 minutes. Cool on racks 15 minutes.

NOTE: Cookies may look underdone but will become firm as they cool.

Also, you don't have to put chocolate, nuts and raisins in all cookies. I make a few plain oatmeal. A few with chocolate chips. A few with raisins and nuts etc.
