Greek Grape Leaves (Dolmathes)
1 pound lean ground beef
½ Cup raw rice
½ Cup chopped parsley
2 Tsp. salt & pepper
3 Tsp. butter
1/2 Cup chopped onion
Jar Grape leaves
Step 2
3 Eggs
6 TBSP. lemon juice
~ Rinse leaves.
~ Saute onion and butter.
~ Mix meat and everything else (except step 2 stuff). Don't cook meat.
~ Put about 1 TBSP. meat mixture in each leaf with the shiny side out.
~ Pack leaves tightly in large pot. Put enough water to cover and put
something heavy on top of (glass pie dish or something like that because
the leaves try to float).
~ Cook on stove. Bring to a boil and then reduce heat and let simmer for
about 45 minutes.
~ SAVE WATER FROM LEAVES.
Step 2
~ Beat eggs and then add lemon juice and beat well.
~ Take about ½ cup water from leaves and add to lemon mixture.
Keep stirring with mixer. Gradually add all the water and mix well.
~ Pour over leaves.
