Cheesecake Bites
Cup light brown sugar
1 Cup flour
½ Cup chopped pecans
Cup butter or margarine - melted
1 8 Oz package cream cheese - softened
¼ Cup sugar
1 Egg
2 TBSP. milk
1 TBSP. lemon juice
1 Tsp. vanilla
Mix brown sugar, flour and nuts.
Stir in butter till blended. (Reserve Cup of mixture).
Pat remaining in greased 8" square baking pan.
Bake in preheated 350° oven about 12-15 minutes.
Beat cream cheese and sugar till smooth.
Beat in remaining ingredients.
Pour over baked crust; sprinkle with reserved pecan mixture. Return to oven and bake for 25 minutes. Cool slightly then cut into squares.
Yields: 16 2" squares or 32 1" squares
