Cheesecake Buffet Tarts

This uses individual tart crusts which are nice for kids. I add different food colorings to the cream cheese or the topping. It's fun eating a purple pie!

Filling:
6 Ready-Crust Single serve Graham Cracker crusts
4 Oz Cream cheese - softened
¼ Cup sugar
2 Tsp. lemon juice
¼ Tsp. vanilla
1 Egg

Topping:
½ Cup sour cream
1 TBSP. sugar
¼ Tsp. vanilla

Preheat oven to 325°.

In medium bowl beat cream cheese until fluffy.

Gradually beat in sugar, lemon juice and vanilla.

Add egg, beating well.

Place tart crusts on baking sheet and pour in filling.

Bake 15-20 minutes.

Prepare topping; in small bowl combine sour cream, sugar and vanilla.

Spread over tarts and bake about 10 more minutes.

Cool then chill for 2-3 hours before serving.

Garnish with fresh fruit or canned pie filling if desired.
